You can serve this sauce with sausage or ground turkey over a bed of cooked rice or spaghetti squash!
Tomatillo and Okra Sauce
Makes 10 servings 15 minute prep time 60 minute cook time
Ingredients 1/2 clove of garlic 7 medium tomatillos 5 medium whole (2-3/5" dia) tomatoes 4 cups okra 1 tsp sage (ground) 1 tsp leaves basil (dried) 2 tsp ground oregano 2 x 1/4 tsp, 2g Himalayan chef Himalayan pink salt 1 tsp, 15ml avocado oil 1 cup (8 fl oz) water
Directions
1. Bring avocado oil to temp (med heat), add fresh garlic and sauté until golden. 2. Add all other ingredients and bring to boil. 3. Cover and cook on med heat until tomatillos and tomatoes are cooked down. 4. Remove lid and simmer until sauce thickens to desired serving thickness. 5. Serve and enjoy!
